Romantic Recipes: Mexican Fiesta II

Try staying in and having romantic date together. With these romantic recipes you can pull off a romantic evening together, in the comfort and privacy of your own home. Make a list of the ingredients you will need from the romantic recipes listed below and prepare a grocery list. Think of any additional items you may want to enhance the evening or play up the Mexican theme. Fresh flowers and mood enhancing music go well with this theme, these romantic recipes, and setting the scene.

Appetizer: Quesadillas
6 (10-inch) flour tortillas
½ cup unsalted butter (1stick)
1 lb grated Monterey jack cheese
1 chicken breast shredded
½ cup drained and minced bottle pimiento
4 minced jalapeno peppers
2 tbsp minced fresh cilantro
1 tsp ground cumin

Cook and shred chicken breast.

Preheat oven to 400 degrees. Place 3 tortillas on a baking sheet. Spread butter on the tortilla top and toast for 5 minutes, until golden.

In a bowl combine cheese, chicken, pimiento, jalapeno peppers, cilantro, and cumin. Spoon mixture onto tortillas and place a remaining tortilla over the top of each one. Bake for 5-10 more minutes or until cheese is melted. Take out and cut into slices.

Serve with sour cream, lettuce, salsa, and guacamole.

Entree: Super Nachos
1 lb ground beef
1 packet of taco seasoning
1 14.5 oz bag of tortilla chips
1 onion finely diced
2 cups shredded cheddar cheese
1 16 oz can refried beans
1 cup chopped lettuce
1 fresh jalapeno pepper sliced
½ cup black olives
2 diced tomatoes
2 tbsp diced fresh cilantro leaves

Brown beef in a skillet. Mix in taco seasoning.

Place tortilla chips on a baking pan. Sprinkle onions, cheese and beans over chips. Broil until cheese melts. Remove from oven and spoon on beef. Add lettuce, jalapenos, olives, tomatoes and cilantro. Top with sour cream and guacamole.

Dessert: Tres Leche (Milk Cake)
5 eggs
1 tsp baking powder
2 cups white sugar
½ tsp vanilla extract
1 ½ cups all-purpose flour
½ cup unsalted butter
2 cups milk
1 14 oz can sweetened condensed milk
1 12 fluid oz can evaporated milk
1 ½ cups heavy whipping cream
1 tsp vanilla extract
2 kiwi
several strawberries

Preheat oven to 350 degrees. Grease and flour a 9 x 13 baking pan.

Sift flour and baking powder together and set aside.

Cream butter and 1 cup of sugar together until fluffy. Add eggs and ½ tsp of vanilla extract, beat well. Add the flour and baking powder mixture 2 tbsp at a time. Mix until well blended. Pour batter into prepared pan. Bake at 350 for 30 minutes. Poke cake several times with a fork.

Combine the whole milk, evaporated milk, and condensed milk together. Pour over the top of the cooled cake.

Whip whipping cream, 1 tsp vanilla, and 1 cup of the sugar together until thickened. Spread over the top of the cake. Slice strawberries and kiwi over the top.

Drinks: Corona

These romantic recipes are fairly easy and extremely tasty. If the weather allows, these romantic recipes are enhanced by dining out on the patio. Add torches, candles or string lights for an added romantic touch. Enjoy a taste of Mexico and a romantic evening with your love.
